Low Country Boil

My family spent a week every summer in Sunset Beach, NC, where one of the meals we all enjoyed was the Low Country Boil, with shrimp we got fresh off the fishing boats. We always used an outside cooker with a 7–8-quart stockpot, but you can do it inside with a big pot. There is a lot of steam involved, so outside is really convenient.

 

Bottle of white wine

Old Bay Seasoning 1 tbs. per quart of water

3 lbs. small potatoes, left whole

3 lbs. smoked sausage (we prefer andouille), cut in 3–4" pieces

6–8 ears corn, cut in half (we used Darke County Ohio corn brought from home)

3–4 lbs. shrimp, unpeeled

 

Fill the stockpot about halfway with water and add the bottle of wine. Bring to boil. Add the seasoning and let simmer for a few minutes.

 

Add the potatoes to the pot and allow the water to return to a boil and cook for 5 minutes. Add the sausage and cook for 15 more minutes. Add the corn and cook for 10 more minutes. Check the potatoes to make sure they are done; if not, cook another minute or two before you add the shrimp. Add the shrimp and cook for about 3–4 minutes until pink—depending on the size of shrimp you use, it can take a little more or less time—you need to watch it when you add the shrimp and watch until they turn pink.

 

Drain in a colander and discard the cooking liquid.

 

Put on a big platter or line a picnic table with butcher paper and dig in.

 

Serve with a crusty loaf of bread.

Banana Peach Bar Cookies

This has the southern flavors of bananas and peaches. It can be modified using pineapple or pineapple-orange preserves for a tropical bar cookie. These banana and peach bar cookies were created while we were staying at the Ronald McDonald House in Atlanta, GA, using family pantry items.

 

 

¼ cup butter, softened
½ cup sugar
1 cup peach preserves (divided in two ½ cup portions)
1 egg
½ tsp. vanilla

 

In mixing bowl cream the butter and sugar until fluffy. Add the ½ cup preserves, egg, and vanilla to the creamed mixture; mix well.

 

⅔ cup all-purpose flour
¼ tsp. baking powder
¼ tsp. baking soda
⅛ tsp. salt
1 very ripe small banana, mashed (¼ cup)
½ cup flaked coconut

 

Thoroughly stir together the flour, baking powder, baking soda, and salt. Stir into creamed mixture. Blend in the mashed banana and coconut; mix well. Spread in greased 9 x 9-inch baking pan. Bake at 350 degrees until cookies test done, 23–25 minutes.

 

½ cup peach preserves
¼ cup chopped almonds

 

Spread warm cookies with the remaining ½ cup preserves. Sprinkle with the chopped almonds. Cool cookies thoroughly; cut into bars.

not
