The BEE’S KNEES

This cute-sounding recipe plays on the soothing combination of lemon and honey to create a smooth and comforting drink with a heavy dose of sweetness. The pickled lemon juice helps to offset the honey
.

 2 ounces gin

3

4
ounce honey

1

2
ounce fresh lemon juice

Dash juice from Preserved Lemons (see
Part II

Part II
), for garnish

Shake all ingredients in a shaker tin of ice. Strain into a martini glass. Garnish with a pickled rind.

Every ingredient in this drink, from the honey to the pickled lemon juice, has antiseptic or antibiotic properties. Give it a try if you’re feeling under the weather. Just don’t drink too many servings!

WATERMELON COSMO

This drink lends itself well to a variety of pickled ingredients. We’ve recommended pairing it with Watermelon Pickles, but you could just as easily garnish it with Preserved Lemons or Spiced Orange Rings (see
Part II
) to play on the other flavors
.

YIELDS 1 SERVING

 1
1

2
ounces watermelon vodka

1

2
ounce Cointreau

1

4
ounce lime juice or freshly squeezed lime

 1 ounce cranberry juice

The BLUE MOON

Don’t confuse this with the beer of a similar name! The Blue Moon is a lemon-flavored drink that gets playful with violet liqueur, an unusual floral note
.

YIELDS 1 SERVING

 2 ounces gin

 1 ounce violet liqueur

1

2
ounce fresh lemon juice

1 piece lemon rind from Preserved Lemons (see
Part II
)

Shake all the liquid ingredients in a shaker tin with ice. Then strain into a chilled martini glass. Garnish with the preserved rind.

Violet liqueur can be a bit difficult to obtain. If you can’t find it, consider substituting it with a vanilla liqueur. If you do so, you might wish to add a small dash of pickled lemon juice to the cocktail to help cut through some of the pronounced vanilla sweetness.

CUCUMBER GIMLET with PICKLED LIME

This gimlet features the addition of cucumber to the normal gin and lime juice combination. The cucumber adds a lovely cooling touch to the already refreshing drink
.

YIELDS 1 SERVING

2 tablespoons cucumber, chopped and de-seeded

 2 ounces gin

1

2
ounce lime juice

ounce juice from Pickled Limes (see
Part II
)

 1 ounce simple syrup

Drop the fresh cucumber into the bottom of a short glass and muddle. Add a handful of ice and the rest of the ingredients. Stir.

For the nonpickled lime juice in this recipe, many purists consider Rose’s lime juice to be the only acceptable or “real” version of this recipe. Of course, a purist likely wouldn’t be drinking a pickled gimlet, so feel free to use fresh lime juice if that suits you.

MANGO CHUTNEY MARGARITA

.
