Acknowledgments

This journey with tea and cookies has been delicious and edifying in equal parts. I was lucky to have had personal tastings with three major forces in the tea world: Adrienne Etkin of Admari Tea, Michael Harney of Harney and Sons, and Miriam Novelle of T Salon. Each expert enlightened me in his or her own way to the nuances of tea. Adrienne spontaneously served me my first properly brewed white tea, served in consecutive steepings in tiny cups. Michael did a full presentation of many teas at a local tea shop, Tea Time in Short Hills, New Jersey, that inspired and educated everyone there. And Miriam gave me a guide of her specialty, blended teas.
