Recipe 6: Pecan Date Tart

You will need:

  • Almond Crust-1 (recipe 5)
  • Pecans-1 ½ cup
  • Dates (pitted)-10
  • Eggs-3 large
  • Rapadura sugar- 4 tsp
  • Organic Allspice-1 Tbsp.
  • Cinnamon-1/2 tsp
  • Pasteurised butter-1/2 cup

 

Directions:

Preheat oven to 350 degrees. Add dates, eggs and sugar in a processor and blend well. Now add the spices and blend for 1 minute. Now add softened butter and blend some more till batter is smooth. Tip the batter in the prepared, cool crust. Smoothen it out. Now decorate the pecans on top of the batter. Bake for 30 minutes. Cool and serve.

Recipe 7: It’s just a custard Tart!

You will need:

  • Almond crust-1 (recipe 5)
  • Eggs-3 large
  • Pure coconut milk-1 cup
  • Organic Vanilla essence-1 tsp
  • Organic honey-2 Tbsp.

 

Directions:

Preheat oven to 300 degrees. Heat the coconut milk and honey over low flame.  In a separate bowl, whisk eggs. Now add the essence and whisk for 30 secs. Boil the milk and remove. When it is a little cool, add very slowly to the mixture. Keep whisking continuously and make sure you add the hot milk slowly. Create a ‘bain marie’ (a pan of hot water in which you can place the tart pie for slow cooking). Bake for 25 minutes. Remove from oven and carefully place in fridge to chill.

Recipe 8: Caramel Banana Tart

You will need:

  • Almond crust-1 (recipe 5)

For caramel

  • Organic honey-3 Tbsp.
  • Cinnamon Powder-1/2 tsp
  • Molasses-3 Tbsp.
  • Organic Vanilla Essence-1 tsp

For filling

  • Banana (ripe) -1 ½ large
  • Cacao Powder-3 Tbsp.
  • Avocado (ripe) -1/2
  • Organic honey-2 Tbsp.
  • Coconut oil- 1 ½ Tbsp.
  • Pure Coconut milk- 2/3 cup

 

Directions:

For caramel

Heat all ingredients in a pan over medium flame. Bring to boil, and then let it simmer. All the while keep stirring till the mixture thickens to the consistency of caramel. Cool.

For filling

Put the chopped banana and avocado in blender and blend for 1 minute. Now add the rest of the ingredients except the coconut milk. Blend well till smooth. Now add the milk and blend for another 2 minutes. To assemble, spread the caramel on the Almond crust. Top it with the prepared banana filling. Take care to spread evenly. Decorate with roasted nuts of your choice. Chill.

Recipe 9: Choco-mint Tart

You will need:

  • Almond crust-1 (recipe 5)
  • Organic Mint essence-1 tsp
  • Organic Vanilla essence-1tsp
  • Coconut oil-8 Tbsp.
  • Organic Cacao powder-1 ½ cup
  • Coconut Milk-10 Tbsp.
  • Sea Salt-a pinch

 

Directions:

Put all the ingredients in a microwave safe container and heat on medium. Whisk well and heat again. Repeat till the batter is smooth and consistent. Tip the batter in the prepared almond crust and chill.

Recipe 10: Creamy Pistachios Tart

You will need:

  • Almond crust-1 (recipe 5)
  • Organic Pistachios (shelled) -1 cup
  • Pure Coconut milk-2/3 cup
  • Pure Honey- 2 Tbsp.
  • Organic Vanilla essence-1tsp
  • Sea Salt-1/2 Tbsp.

 

Directions:

Dry roast the pistachios along with sea salt. Cool and soak in pure water for 6 hours. Drain water and blend pistachios along with the rest of the ingredients. Make sure you keep scraping off the sides of the blender. Tip the pistachios batter into the prepared almond crust. Freeze for 1 hour, then place in fridge.

Recipe 1: Happiness by Chocolate Cookies

You will need:

  • Paleo Dark Chocolate-1 cup
  • Eggs-3 large
  • Organic Honey-1/2 cup
  • Pasteurised Butter-6 Tbsp.
  • Almond Flour-1 cup
  • Sea salt-pinch
  • Paleo Chocolate chips-1/3 cup
  • Organic Vanilla Extract-1 tsp
  • Organic Baking Soda-1/2 tsp

 

Directions:

Preheat oven to 350 degrees. Line a baking sheet with butter paper. Melt dark chocolate in a microwave along with butter. Mix well. Put this in a blender along with the wet ingredients. Now add the flour, baking soda and salt and fold in. Add the chocolate chips and mix well. Now drop a tablespoon of batter one by one on the butter paper. Make sure to keep a distance of 2 inches between each dollop of batter. Bake for 12-15 minutes. Cool.

Recipe 2: Chocolate and Sweet Potato cookies

You will need:

  • Baked sweet potato-2 small (bake in oven at 350 degrees for 25 minutes)
  • Paleo Chocolate Chips-2/3 cup
  • Egg-2 small
  • Almond Flour-2/3 cup
  • Pasteurised butter (softened)-1/2 cup
  • Pure Honey-2 Tbsp.
  • Allspice-1/2 tsp
  • Vanilla essence-1/2 tsp

 

Directions:

Preheat oven to 350 degrees. Prepare baking sheet by lining it with parchment sheet. Mash the sweet potato and put in a mixing bowl along with the rest of the ingredients except for the chips. Now fold in the chips and drop a tablespoon of batter one by one on the sheet. Bake for 15 minutes. Cool.

  • ½ cup fresh Cranberries
  • Egg-2 medium
  • Ground hazelnuts-2 Tbsp.

  • Baking soda-1/2 tsp
  • Vanilla Essense-1 tsp
  • Almond Essence-1 tsp

 

Directions:

Preheat oven to 350 degrees. Prepare baking sheet by lining it with parchment sheet. Whisk the eggs till fluffy. Add the rest of the ingredients except berries and chips and mix till well combined. Now fold in berries and chips. Now fold in the chips and drop a tablespoon of batter one by one on the sheet. Bake for about 15 minutes. Cool.

Recipe 1: Berry Ice Cubes

You will need:

  • Popsicle molds-12 (silicone/steel)
  • Pure Organic Coconut Water-3 cups
  • 3 berries (Blueberries/Raspberries/Blackberries)-2 cups

 

Directions:

Add a combination of berries in each mold. Top it up with coconut water. Freeze for 6 hours. Serve on a stick!

Recipe 2: Mango Medley

You will need:

  • Alfonso Mango (ripe) -2 large
  • Coconut Milk-1 cup
  • Pure Saffron-few strands
  • Pecans (roasted)-3 Tbsp.
  • Star and Moon shaped ice cubes (you may use any that you have)

 

Directions:

Peel and roughly chop mangos. Add all the ingredients in a blender and blend till smooth. Pour in the ice cubes and freeze for 5 hours. Remove and serve with roasted pecans.
