Recipes Based on Betty's Base Bread Mix

For the following recipes, all you have to do is follow the instructions in the preceding section. By making the mix, you've already done half the work. Couldn't be easier!

Apple Date Bread

Tart apples and sweet dates — what a combination. We love this bread with nothing added, but when we place a dish of cream cheese beside it on a buffet table, both the Apple Date Bread and the cream cheese disappear. It's also great as a dessert with a scoop of vanilla ice cream on the top. Maybe a tad bit of carmel on the ice cream?

Preparation time:
20 minutes

Approximate cycle time:
1 1/2 hours

Yield:
16 slices, 32 servings

1 cup apple juice

1/4 cup vegetable oil

1 large egg

1 1/3 cups Betty's Base Bread Mix

3/4 cup all-purpose flour

1/4 cup whole-wheat flour

1/4 cup sugar

1/2 cup finely chopped apples

1/4 cup chopped dates

You may use any fresh apple, but we prefer the tartness of the Granny Smith variety.

Variation:
If you like a drier bread, use diced, dried apples.

Carrot Raisin Bread

For an afternoon snack or a light dessert, spread cream cheese on a slice of this bread and serve it with a dish of peaches.

Cranberry Orange Bread

Make Cranberry Orange Bread as a holiday gift for your special friends. This bread gets better with age, so make it a ahead of time to have it ready for serving or giving during the holiday season. Freezing is the best way to store the bread. After it is completely cool, wrap it tightly in aluminum foil, and place the loaf in a freezer bag. If you are giving it as a gift, the aluminum foil makes a perfect wrapping paper — add a red ribbon and bow. What a presentation for a holiday gift!

If you plan to serve the Cranberry Orange Bread, cut the bread into slices before freezing. The slices can be easily popped apart for quick thawing.

You will satisfy any chocolate lovers you know with this quick bread. It also makes wonderful muffins. Either way you prepare this recipe, we can guarantee you that it will quickly disappear.

3/4 cup water

1/4 cup orange juice

1/4 cup vegetable oil

1 large egg

1 1/3 cups Betty's Base Bread Mix

1 cup all-purpose flour

1/4 cup sugar

1 tablespoon grated orange rind

3/4 cup (4 ounces) chocolate chunks

Variation:
You may substitute 3/4 cup chocolate chunks with 3/4 cup chocolate chips or 2/3 cup mini chocolate chips.

Tip: If you would like to make
Chocolate Chunk Muffins, stop the bread machine after it has mixed the dough. Fill greased muffin cups 2/3 full. (You can also use muffin paper liners.) Bake in a preheated 400° oven for approximately 20 minutes. The batter makes 12 muffins. If you have any empty muffin cups, fill them with water so the pan doesn't overheat and cause the other muffins to burn.

Corn Bacon Bread

Here is good old-fashioned corn bread at its finest. The bacon drippings and the crumbled bacon enhance the flavor to make it lip smackin' good. Give this to a Southern boy and he'll think he's in heaven.

3 tablespoons vegetable oil

1 tablespoon bacon drippings

1 large egg

1 cup yellow cornmeal

2 tablespoons crumbled, cooked bacon

Tip: The next time you cook bacon, save the grease in a small container in the refrigerator. Save a couple of strips of bacon and place them in a small freezer bag. When you're ready to make Corn Bacon Bread, you'll have the bacon and the drippings on hand.

If you haven't got the time to make a yeast bread, but you need a hearty bread quickly, here's an easy one. Chances are you have all the ingredients on your pantry shelf.

1 cup buttermilk

1/4 cup vegetable oil

1 1/3 cups Betty's Base Bread Mix

3/4 cup whole-wheat flour

1/4 cup dry oatmeal

1/2 cup brown sugar

1/3 cups chopped walnuts

Tip: When we say dry oatmeal, you can use old-fashioned rolled or quick-cooking oats.

Tip: You can substitute dry buttermilk powder for buttermilk. You do not have to reconstitute the powder in water first. Replace the 1 cup of buttermilk with 1 cup of water and measure 1/4 cup dry buttermilk powder in with the dry ingredients.
