CELIAC DISEASE
Celiac disease is caused by an intolerance to gluten found in wheat, rye, oats, and barley. In celiacs, the gliadin protein in gluten damages the lining of the intestine. This impairs the absorption of nutrients and can cause serious malnutrition. About 1 percent of the population are thought to be celiacs. It may be diagnosed in babies when they are first given cereal grains. However, many people do not get diagnosed until they are in their forties. If untreated, more serious health problems can develop, such as infertility and osteoporosis.
